December 21: Santo Tomás
The local festive calendar in Bilbao ( Basque Country, Spain) ends on December 21 with the festival of Santo Tomás (Saint Thomas) or Santo Tomás market, prelude to the long-awaited Christmas holidays.
The best turkeys, capons, fruit and vegetables from the "baserris" (farmhouses) of Vizcaya are displayed on more than 300 stalls set up between El Arenal and Plaza Nueva. If it is your first visit to this fair, don't leave without first having tried a talo with savoury sausage accompanied by a good glass of txakoli. Talo is a flat corncake or maize omelette made with flour water and salt which is wrapped around a piece of hot chorizo sausage and txakoli is a popular white wine of the Basque Country.
